How to Roast a Large Sweet Potato in the Oven Quickly

Roasted sweet potatoes, with their natural caramel sweetness and simple spices, make an easy, nutritious side dish that pairs with many meals.

Roasted sweet potatoes have become a go-to side in our kitchen. They’re packed with nutrients and flavor, and their caramelized edges and tender centers are hard to resist.

Sweet potatoes vary wildly in size—from small, fist-sized tubers to enormous, football-shaped ones—so I developed a method that works well no matter how large your sweet potato is.

This technique combines a brief microwave step with oven roasting to cut down on baking time while still delivering that golden, slightly crispy finish.

Easy Roasted Sweet Potatoes Recipe

Ingredients

  • 1 very large sweet potato (or several small to medium ones)
  • Salt and black pepper, to taste
  • 4 tablespoons olive oil (or enough to coat the pieces)
  • Cayenne pepper or chili powder, for a spicy kick (optional)

Step 1: Wash and cut the sweet potato

Scrub the sweet potato under running water and trim away any dark spots. Leaving the skin on is fine and adds texture and nutrients; peel only if you prefer.

Cut the potato into pieces that are roughly the same size so they cook evenly. For this large tuber I cut 1-inch rounds and halved each round. You can dice into cubes for quicker roasting or cut into thin strips to make oven-baked fries—just adjust the baking time accordingly.

Tip: Large sweet potatoes can be tough to cut. Use a very sharp, sturdy knife, secure the potato on the cutting board, and rock the knife back and forth while applying steady pressure. Keep fingers clear of the blade.

Step 2: Microwave briefly to soften

Place the cut pieces on a microwave-safe plate and microwave for about 5 minutes. This softens the pieces so the oven finish takes less time and still develops a nice roasted exterior.

Step 3: Oil and season

Drizzle olive oil into a baking pan or rimmed baking sheet and toss the partially cooked sweet potato pieces to coat them evenly. Season with salt and pepper, and add cayenne or chili powder if you like heat. Make sure each piece has a light coating of oil so they brown nicely.

Step 4: Roast in the oven

Spread the pieces in a single layer on the baking sheet and roast at 400°F (about 200°C) for 30–45 minutes. The exact time depends on the size and thickness of your pieces. Check for doneness by piercing a piece with a fork—when it’s tender and the bottoms are golden-brown and slightly crispy, they’re ready.

Serving suggestions

Serve these roasted sweet potatoes alongside grilled or roasted meats, such as hamburger steak, roasted chicken, or your favorite weeknight entrees. They also work well as a base for bowls or alongside sandwiches like sloppy joes. If you cut them into long strips, serve them with a dipping sauce—garlic mayo or a tangy yogurt sauce pairs especially well.
