In this article: These 5 quick and healthy weeknight meals will give you ideas as you plan your healthy eating routine!
Last week I shared my healthy habits and weight loss journey on IGTV. In it, I summarized the steps that helped me finally get some traction with weight loss.
I also put together some free printables to help anyone who wants to work on meal planning and weight loss tracking. You can find them in the VIP Printables Resource Library. If you aren’t a VIP yet, just click here to become one!
Since then, many people have asked for the recipes we use on our healthy eating journey. Here are 5 that are on regular rotation at our house.

5 Quick & Healthy Weeknight Meal Ideas
1. BBQ Burgers & Macaroni Salad

When the warmer weather arrives, we pull the cover off the barbecue and use it constantly! Burgers or smokies are probably on the menu at least once a week. The question is always, “What should we have with it?” This macaroni salad is different from traditional versions and packs in all kinds of healthy veggies.
And the bonus? The leftovers are absolutely delicious the next day! You can add chopped deli turkey or ham to turn it into a stand-alone lunch.
2. Chicken Fajita Wraps

If the day gets away from me and I need to cook dinner lickety-split, these chicken fajita wraps are one of my go-to meals. They only need one pan (cast iron is my favorite), and you can make them as spicy, or not, as you like. We’ve found that we eat smaller portions now, but we still want them FULL of yummy flavor and spice.
3. Skinny Chicken Alfredo

Pasta used to be one of my all-time favorite foods! But when I decided to change how I eat, I wanted to find a way to get the same flavors I loved with fewer calories. Spaghetti squash was a delightful discovery. I had never tasted it before, and I was delighted with how well it stood in for fettuccine noodles.
Then I put together a few different recipes to create my own version of Skinny Chicken Alfredo. It takes a little more time because of the simmering, but it is so worth it!
4. Chicken Tortilla Bake

Yep, we eat a lot of chicken!;) This Chicken Tortilla Bake can be made ahead and frozen to pull out on busy days. I’m a HUGE fan of cooking in bulk and freezing ahead. You can see how I’ve done that in the past in this post.
Now that it’s just my husband and me at home (hello, empty nest…), I do far less cooking in bulk. I’m still looking for healthier recipes that freeze well in advance.
5. Spicy Lime Chicken Salad

This dinner salad is SO delicious and quick to put together. It’s full of flavor and will fill you up! The recipe calls for mangoes, but I substituted strawberries the other day and it was delicious. If you like things spicy like we do, drizzle a little avocado and jalapeño dressing over it!
And if you’re looking for more tasty summer salads, here’s a list of 12 yummy options.
So there you have it! Five of our favorite weeknight meals.
