Creamy White Chicken Chili — Freeze-Ahead Comfort Soup

I promised some freeze-ahead meal recipes a while back and finally have another favorite to share. If you missed the lasagne recipe I mentioned earlier, it’s available on my site. This creamy white chicken chili is perfect for making ahead: you can prepare it up to the point of adding milk, freeze it, and finish it later for a hearty, comforting meal.

Why this recipe works for freeze-ahead meals

This chili assembles easily and freezes well because the dairy is added only when you reheat it. Prepare and simmer the base, cool it, and freeze in portioned bags or containers. When you’re ready to eat, thaw slightly, heat slowly in a crock pot or on the stove, then stir in the milk, thicken with flour, and fold in the cheese just before serving. The flavors deepen during the slow simmer, and the final creamy finish makes a comforting, satisfying bowl.

Ingredients (with chicken)

  • About 6 boneless, skinless chicken breast halves, diced
  • 1 cup chopped onion
  • 1 cup thinly sliced celery
  • 2 garlic cloves, minced
  • 2 cans (19 oz each) white kidney beans (cannellini or great northern)
  • 12 oz corn with liquid
  • 2 cans (4 oz each) diced green chiles
  • 2 tsp chicken bouillon powder
  • 1 tsp ground cumin
  • 1/2 tsp black pepper
  • 1 cup milk (use 1% or swap for half-and-half for an even richer soup)
  • 1 Tbsp all-purpose flour
  • 1 cup shredded Monterey Jack with jalapeño (or any melting cheese you have on hand)

Directions

1. In a large Dutch oven or heavy skillet, heat a little cooking oil over medium heat. Add the diced chicken, chopped onion, sliced celery, and minced garlic. Sauté until the chicken is no longer pink and the onions are soft and translucent.

2. Add the beans (including some of the liquid if desired), corn with its liquid, diced green chiles, chicken bouillon, cumin, and black pepper. Stir to combine, then cover and simmer gently for 40 minutes, stirring occasionally to prevent sticking.

3. If you plan to freeze the chili for later, this is the point to cool it thoroughly and transfer it to freezer-safe bags or containers. Label and freeze. When ready to use, thaw in the refrigerator overnight or partially thaw and place in a crock pot to simmer on low until warmed through.

4. To finish the chili: whisk the milk and flour together in a small bowl until smooth, then stir the mixture into the hot chili. Add the shredded cheese and heat, stirring, until the soup thickens slightly and the cheese is fully melted and incorporated.

Serving suggestions

Serve the creamy white chicken chili hot with fresh bread or warm biscuits for dipping. It’s also great topped with extra shredded cheese, a squeeze of lime, chopped cilantro, or a dollop of sour cream if you like. For a complete comfort meal, pair it with a simple green salad.
