How to Cook Beets on the Stovetop

Fresh beets must be cooked before assembling the salad. Stovetop boiling is straightforward and reliable:

  1. Rinse the beets under cold water to remove dirt.
  2. Trim the leafy tops and root tip.
  3. Place the beets in a saucepan and cover with water by an inch or two.
  4. Bring to a boil, then reduce heat to a gentle simmer. Cook 30–40 minutes until a fork pierces the beet easily but they aren’t falling apart.
  5. Drain and rinse briefly with cold water. The skins will slip off easily—rub them off with your hands or a paper towel.
  6. Cool the beets, then dice into bite-sized pieces for the salad.
