A creamy, crunchy corn salad loaded with cheese, diced peppers, and crushed Frito chips—an easy no-cook side that’s perfect for potlucks, picnics, and backyard barbecues.

Ingredients

  • 2 cans corn, drained
  • 1 red pepper, diced
  • 1/2 red onion, diced
  • 2 cups shredded cheese
  • 1 cup mayonnaise or Miracle Whip
  • 1 small bag Frito chips (plain or chili cheese flavor)

Instructions

  1. Drain the canned corn thoroughly and transfer it to a large mixing bowl.
