These Graham Cracker Toffee Bars are a decadent, chocolatey treat with a delightful crunch! Topped with nuts and dried cranberries, they’re perfect for gifting, sharing, or indulging in yourself.

Before Christmas, my husband and I received a pretty little gift bag tied with a ribbon from some friends from church. Inside, we found a sweet treat unlike anything I’d ever tried before. One bite in, and I was hooked! Decadent, chocolaty, with little bursts of crunchy, nutty deliciousness—I knew right away that I needed the recipe.
I texted the thoughtful couple who had gifted us these treats, thanking them and (of course) asking for the recipe. Thankfully, they were happy to share – so I’m sharing it with you, too!
After a little research, I discovered this recipe is a variation of the classic saltine cracker toffee, sometimes called “Christmas Crack.” But this version? It’s even better! Instead of saltines, the base is made with graham crackers, giving it a rich, caramelized flavor. The unique twist? Chopped nuts and dried cranberries, which add the perfect balance of crunch and chew – sort of like a fruit and nut bar.
Fair warning—these toffee bars are completely addictive! They make a big batch, so they’re perfect for gifting, holiday dessert trays, or just a treat-yourself moment with a hot cup of coffee.

Helpful Tips When Making This Recipe
- Reserve some chopped nuts to sprinkle on the warm chocolate for a nice topping.
- Let the toffee set fully before breaking or cutting. I set the pan in the freezer for a few minutes to speed up the process.
- Work quickly through each step. This recipe is really easy, but I didn’t linger too long on any one step! I worried a bit when some of the toffee started to peak through the chocolate as I spreaded it, but it cooled and turned out just fine.

Substitutions and Variations for this Graham Cracker Toffee Bars
- You can add some raisens along with the craisens to give it another flavor burst.
- Top the warmed chocolate with colored sprinkles or large salt for a different look and flavor.
- Try different nuts like pecans or walnuts for variety.

Graham Cracker Toffee Bars with Almonds & Craisens
Graham cracker toffee bars are a seriously addictive treat! Layers of graham crackers, rich toffee, melted chocolate, and crunchy nuts and dried cranberries make these bars hard to resist. Perfect for holiday platters or any time you need a snack!
Ingredients
Method
- Heat the oven to 375 degrees.
- Line an 11 x 16 inch baking pan with parchment paper, letting it hang up the sides too. Cover the bottom with one even layer of graham crackers.
- In a saucepan over medium heat, melt the butter and brown sugar. Stir constantly until the butter has fully melted and the mixture just reaches a boil. Take it off the heat and pour it over the graham crackers, spreading with a spatula so every cracker gets coated.
- Scatter the cranberries and 1 cup of chopped almonds over the top.
- Bake for 10 minutes at 375 degrees, or until the toffee bubbles around the edges.
- Take the pan out of the oven and sprinkle 1 1/2 cups of chocolate chips on top. Return it to the oven for 1 or 2 minutes, until the chocolate softens enough to spread. Spread the chocolate evenly across the top and scatter the remaining 1/2 cup of chopped almonds over it.
- Chill in the refrigerator (or freezer) until completely cool and set. Then break or cut into pieces.
