I learned to make soup from watching my mother-in-law in her cheerful orange-papered kitchen. She cooked by instinct, rarely following written recipes, so I wrote down her steps as she worked. Recently I rediscovered those notes and adapted her traditional approach to be faster and accessible for busy cooks—while keeping her special touch: star anise.

Ingredients for Chicken Noodle Soup

(Printable recipe card details provided below for easy reference.)

  • 1 pound boneless, skinless chicken breasts, cut into 1-inch chunks
  • 2 tablespoons olive oil, divided
  • 2 tablespoons butter, divided
  • 1 cup diced white onion
  • 1 cup diced celery
  • 1 cup sliced carrots
  • 1 large clove garlic, minced
  • 5 cups good-quality chicken stock (homemade or store-bought)
  • 3/4 teaspoon dried Italian seasoning
  • 1/8 teaspoon red pepper flakes (optional, for a touch of heat)
  • 3 bay leaves
  • 3 pieces star anise (optional; adds aromatic depth)
  • 1 cup egg noodles or your preferred pasta noodles
  • 1 cup frozen peas
  • Salt and black pepper to taste

Step-by-Step Instructions

  1. Wash and dice the vegetables. Cut the chicken into bite-sized pieces and pat dry.
  2. In a large stockpot or Dutch oven, heat 1 tablespoon olive oil and 1 tablespoon butter over medium-high heat. Add the chicken pieces, season with salt and pepper, and cook until no longer pink inside. Remove the cooked chicken to a plate and set aside.
  3. Add the remaining tablespoon of olive oil and butter to the pot. Sauté the onion, celery, and carrots for about 3 minutes, until the onion begins to turn translucent. Season with salt and pepper while sautéing. Stir in the minced garlic, Italian seasoning, and red pepper flakes, and sauté for another 1–2 minutes until fragrant.
  4. Place the bay leaves and star anise pieces in a spice ball or wrap them in a small piece of cheesecloth. Pour in all the chicken stock and add the spice ball to the pot. Use the back of a spatula to scrape any browned bits from the bottom of the pot—those are full of flavor. Bring the mixture to a boil, then reduce heat and simmer for at least 15 minutes so the carrots soften and the spices can infuse the broth. The soup will gain more flavor the longer it simmers.
  5. Return the cooked chicken to the pot to warm through. When you are ready to serve, bring the soup back to a boil and add the dried noodles. Cook the noodles according to package directions. In the final minute of cooking, stir in the frozen peas. Remove and discard the spice ball (or remove the bay leaves and star anise pieces) before serving.

What is Star Anise?

Star anise is a star-shaped spice with a warm, sweet-licorice flavor. It’s commonly used in Asian and Middle Eastern cooking and can add a subtle aromatic note to soups and braises. To use it in this recipe, break the whole star into pieces and steep them in the broth inside a spice ball or wrapped in cheesecloth so they can be easily removed before serving. If you don’t have star anise, the soup will still taste excellent without it.

What to Serve with Chicken Noodle Soup

This soup pairs wonderfully with crusty bread, sourdough, or warm biscuits. A simple green salad also makes a nice, light complement. Serve with lemon wedges or extra black pepper on the side for those who like a bright finish.

How to Freeze Chicken Noodle Soup

Freeze this soup without the noodles for best texture. Complete the recipe up through simmering, then cool completely. Transfer the soup to heavy-duty freezer bags, lay them flat to freeze, and stack for efficient storage. When reheating, thaw and reheat the broth, then cook fresh noodles directly in the warmed soup and add the peas at the end.
