Why I love freezer meals — and you will, too!

When our children were small I faced the same daily question everyone knows: “What’s for dinner?” The solution that changed everything was planning once a month, buying everything at once, then spending a few mornings cooking and freezing meals. Once frozen, dinners were ready to reheat with minimal effort — a true sanity-saver.

Even now, as we cook for two, that same dinner dilemma comes up. Freezer meals tailored for smaller households are just as helpful. I adapted the larger-family approach to make perfectly portioned meals for two, and the payoff is huge: less stress, fewer last-minute grocery runs, and more time to enjoy the evening.

Freezer meals for two — packaging matters

Freezing smaller portions comes down to the right containers. Choosing dishes that hold just the right amount makes stacking, storing, and reheating simple. Two sizes I recommend are shown below — both have lids, stack well, and are the right volume for two servings.

I also use large freezer zip-top bags and reusable freezer bags for some recipes. Label each container with the dish name and date so you always know what you have on hand.
