Sizzling Chicken Fajitas with Peppers and Onions

I’m always trying to get in and out of the kitchen quickly. My favorite method is to plan and freeze meals ahead of time, but when the freezer is empty I rely on fast, simple recipes. These one-pan Chicken & Pepper Fajita Wraps are a perfect weeknight solution—easy to prepare, packed with flavor, and versatile enough for guests or picky eaters.

This recipe comes together with just a few ingredients and minimal fuss. Using a single cast iron pan keeps cleanup easy while developing great sear and flavor on the chicken. Serve everything buffet-style so guests can build their own wraps, or plate individual portions for a quick family dinner.

How to Make Chicken & Pepper Fajita Wraps

Chicken Fajita Ingredients:

  • 3 boneless, skinless chicken breasts
  • 1 medium onion
  • 3–4 bell peppers (any colors)
  • 1 package fajita seasoning mix (or your favorite homemade blend)
  • 1 cup grated cheddar cheese
  • Flour tortilla wraps
  • Toppings such as salsa, sour cream, shredded lettuce, and diced tomatoes

1. Prepare the ingredients

Trim and slice the chicken breasts into thin strips. Remove seeds and membranes from the peppers and slice them into thin strips, then slice the onion into similar-sized pieces for even cooking.

2. Cook the chicken in a cast iron pan

While any heavy skillet will work, a cast iron pan gives excellent sear and flavor. Heat about 2–3 tablespoons of oil over medium-high heat until hot—when the oil sizzles slightly, add the chicken.

Place the chicken in a single layer, laying pieces in one by one and leaving them untouched for a few minutes so they develop a golden crust. Salt and pepper lightly. Flip when the edges turn white and continue cooking until the chicken is cooked through. Remove the cooked pieces to a clean dish and repeat with any remaining chicken.

3. Sauté the vegetables

With the chicken removed, add all of the sliced peppers and onion to the still-hot pan. Stir quickly; the pan remains hot and will cook the vegetables rapidly. If the pan looks dry or bits begin to stick, add 2–3 tablespoons of water and scrape the pan to release any flavorful browned bits. Season the vegetables with salt and pepper and sauté until crisp-tender.

4. Simmer to marry the flavors

Return the cooked chicken to the pan with the vegetables. Sprinkle the fajita seasoning over everything and add about 1/4 cup of water. Stir to combine, then reduce heat and simmer gently for about 15–20 minutes, stirring occasionally, so the flavors meld and any excess liquid reduces slightly.

5. Assemble and serve

Warm the flour tortillas if you like, then spoon the chicken and pepper fajita filling into the center of each tortilla. Top with shredded cheddar, salsa, sour cream, lettuce, and diced tomatoes—whatever you prefer. Roll up and enjoy.
