I test each recipe carefully and share honest feedback and practical tips. When I recently tried this recipe, I grabbed a muffin from the freezer, microwaved it for 20 seconds, and enjoyed a warm, tender treat with my morning coffee. The muffins are not overly sweet, which lets the fresh strawberry flavor shine. A light vanilla glaze adds just the right touch of sweetness.

  • 1 cup sugar
  • 2 large eggs, at room temperature
  • 3/4 cup buttermilk, at room temperature

fresh strawberries diced and placed on a tray with paper towel
Blotting the fresh strawberries on paper towel removes excess moisture so the muffins don’t get soggy.

Instructions for this Strawberry Muffin Recipe

  1. Preheat the oven to 450°F (232°C). Rinse and dice the strawberries. Spread them on a thick paper towel, cover with another paper towel, and press gently to remove excess moisture. Let them sit while you prepare the batter.
  2. In a large bowl, whisk the melted cooled butter with the sugar until combined. Add the eggs and whisk until smooth. Stir in the buttermilk and vanilla.
  3. Sprinkle the baking powder, baking soda, and salt over the wet mixture and whisk to incorporate evenly.
  4. Add the flour all at once and fold gently until just combined. Do not overmix; a few small lumps are fine.
  5. Fold in the diced strawberries, reserving a few pieces to place on top of the muffins before baking.
  6. For bakery-style tall muffin tops, place paper muffin cups in every other cup of the muffin tin so each muffin has more air around it.
  7. Using an ice cream scoop with a trigger, fill each muffin cup about 3/4 full.
  8. Bake at 425°F (218°C) for 5 minutes, then without opening the oven reduce the temperature to 350°F (177°C) and bake 12–16 minutes more, until tops are golden and a toothpick inserted in the center comes out clean.
  9. Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  10. Glaze the muffins only when they are completely cool.

You can add a simple vanilla glaze before serving or sprinkle large-grain sugar on the tops before baking for extra crunch.

Instructions for the Vanilla Glaze

Whisk about 3/4 cup sifted powdered sugar with 1/2 teaspoon vanilla. Add milk or heavy cream one tablespoon at a time until the glaze is thin enough to just run off the back of a spoon. Drizzle over cooled muffins.

Tips & Tricks

  • For best results use room-temperature eggs and buttermilk—ingredients combine more smoothly and the texture improves.
  • Reserve a few diced strawberries to place on top of each muffin for an attractive finish.
  • If you’re worried about paper liners sticking, lightly spray the inside of the liners before filling.

Substitutions

If you don’t have buttermilk, make a substitute by adding about 1 tablespoon of white vinegar or lemon juice to a measuring cup and filling to 3/4 cup with 2% or whole milk. Let it sit a few minutes before using. You can sprinkle large-grain sugar on the tops before baking instead of adding the vanilla glaze for a sweeter, slightly crunchy finish.

This basic batter works well with other fresh fruit—try blueberries or chopped peaches. Frozen berries can be substituted, but you may need to add a minute or two to the bake time and be sure to drain excess moisture.

Equipment

Use common kitchen tools: a large mixing bowl, whisk, measuring cups and spoons, an ice cream scoop or large spoon for portioning, and a muffin tin. A reusable cake tester or metal skewer is helpful for checking doneness.

Storage

Store muffins at room temperature in an airtight container lined with paper towel to absorb excess moisture. Place another paper towel over the muffins before sealing; they will keep 2–4 days. For longer storage, freeze muffins in an airtight container or freezer bag for up to 2 months. Thaw at room temperature or warm briefly in the microwave for a fresh-from-the-oven texture.

Top tip: Want “fresh from the oven” muffins?

Microwave a muffin for 10-second intervals until warm and soft for a quick, tender treat that tastes freshly baked.
