When polling my Instagram audience about their favorite Christmas confections, Sugar Cookies were the clear favorite! I concur that a batch of Old Fashioned Cut Out Rolled Sugar Cookies is essential for a festive Christmas at our home.

Time constraints led me to test using ready-made sugar cookie dough for this recipe, and the outcome was wonderful! Nevertheless, feel welcome to substitute this with any cherished sugar cookie dough recipe you possess and follow this method.

Heart-shaped cookie cutters make these charming jam sandwich cookies ideal for Valentine’s Day sugar cookies, too. Using store-bought refrigerated sugar cookie dough and your favorite jam, vibrant jam will show through the cut-out forms.

Be mindful that purchased sugar cookie dough tends to expand during baking; these cookies were notably larger post-baking than before they entered the oven!

Method for Making Jam Sandwich Cookies with Pre-made Sugar Cookie Dough

The two ingredients you'll need for this recipe - a purchased package of rolled sugar cookie dough and jam.
This straightforward jam sandwich sugar cookie recipe demands merely 2 ingredients!

Necessary components:

  • Store-bought sugar cookie dough – In Canada, the only brand I located was Pillsbury, in a 468 gram container.
  • Jam of choice – I utilized strawberry jam for most of these cookies, and peach jam for the star-cut shapes. You can employ purchased jams such as raspberry, peach, apricot, or strawberry, or feature your own homemade jam like old fashioned blackberry jam!

Instructions for creating jam cookies with sugar cookie dough

Roll out half of the chilled dough and use your cutters. Place half of these shapes on a lined cookie sheet and apply a small amount of warmed jam to the center of each one.

Cut a small heart or star from the remaining dough pieces, place them on top, and gently press the edges together with a fork.

Bake until the edges just begin to achieve a golden hue, then allow them to cool on the pan to prevent breakage.

Suggestions for this jam-filled sandwich cookie recipe:

  • While preparing the initial portion of the sugar cookie dough, wrap the remaining dough in plastic wrap and chill it; I observed that warming dough caused greater spreading during baking.
  • Using a fork’s tines creates a neat border and seals them well, but sealing the edges with just your fingers is also perfectly acceptable.
  • For a softer texture in these sugar cookies, bake only until they are barely starting to turn golden; excessive browning leads to a crispier result.
  • A light dusting of powdered sugar can be added as a lovely finishing touch.
  • I used a modest amount of jam in some cookies to avoid excess leakage during baking, anticipating potential liquid release. This did not happen, so ensure sufficient jam covers the area beneath the top cut-out piece.
  • The cut out portions of the dough make darling little cookies, too. Just put a tiny bit of jam on the bottom one, cover with the top cutout and seal the edges. A sprinkle of colored sugar looks cute on them, too.

Frequently asked questions

“Do jam filled cookies need to be refrigerated?”

Since these cookies only have a small amount of jam or jelly in them, they can be safely stored in a covered container on a countertop for a few days. However, any longer than a few days, they should be stored in the refrigerator or freezer for best results.

“Can I freeze jam sandwich cookies to use later?”

I’ve read that jam doesn’t freeze incredibly well. However, I have frozen these cookies and used them later, and they still seemed fine! The dusting of powdered sugar should be done just before serving, though.

“How should you store cookies?”

Store cookies in a tightly sealed container or ziploc bag with parchment or wax paper between the layers.

“Can I use homemade sugar cookie dough?“

Absolutely! Store-bought dough is a great shortcut when you’re short on time, but your favourite rolled sugar cookie dough works beautifully too. Try my old fashioned rolled sugar cookies.

“What jam works best?”

A thick jam works best because it stays put in the oven. I love strawberry for red hearts and peach for golden stars, and raspberry, apricot or homemade blackberry jam are lovely too.
