How to Portion, Cook, and Freeze This Recipe to Fit Your Lifestyle

Whether you’re cooking for two or planning ahead, this meatloaf adapts beautifully.

  • Making for two people: Divide the meat mixture in half and freeze one half (uncooked) for later. Or flash freeze both of them individually on a parchment lined pan, and then transfer to a zip top freezer bag to have for later. Adjust the baking time for the smaller sized loaf. It may be cooked through faster. (Start with 40-45 minutes minutes.)
  • Freezing ahead: Prepare the meat mixture and shape it into a loaf.. Flash freeze it on a parchment lined cookie sheet until solid (a few hours). Place in an airtight container or ziptop freezer bag and label it. When ready to bake, thaw in the fridge overnight (on the parchment lined rimmed baking pan you’ll want to bake it on) and proceed with baking instructions.
  • Baking after freezing: If baking from frozen, allow extra time—bake covered with foil at 350°F for 60–70 minutes.

Helpful Tips When Making This Recipe

  • Don’t overmix the meat mixture—this helps keep the meatloaf tender.
  • Mix the ingredients together with clean hands, gently massaging the ingredients to mix together. You can use kitchen gloves if you prefer.
  • It may seem to watery at first, but mix until the water is incorporated into the mixture. It will work!
  • Using a baking sheet instead of a loaf pan allows grease to run off, giving a firmer loaf.
  • Letting the loaf rest for 10 minutes with an aluminum foil tent over it after baking helps the juices settle for cleaner slices.

When it comes to meatloaf, there’s a sweet spot between mixing it enough to combine all the ingredients and keeping it tender. Use your hands, go gently, and stop as soon as everything’s just blended. Write little notes on your printed recipe about what you try, and when you serve this recipe for special occasions. You’ll love having a record of your personal tweaks and memories.
