Ingredients
- 10 large eggs
- 1 (32 oz) package frozen shredded hashbrowns
- 2 cups cooked ham or cooked breakfast sausage, chopped
- 1 medium onion, chopped
- 2 bell peppers, chopped (I used a frozen mix of colors)
- 2 cups shredded cheddar cheese
- 1 cup milk
- 1 cup sour cream
- 1 teaspoon garlic powder
- Salt and pepper to taste
Directions
- Spray a 5- or 6-quart slow cooker with nonstick cooking spray.
- Layer half of the hashbrowns across the bottom of the slow cooker. Top with half of the cooked meat, half of the chopped onion, half of the peppers, and half of the shredded cheese.
- Repeat to create a second layer with the remaining hashbrowns, meat, onions, peppers, and cheese.
- In a medium mixing bowl, whisk together the eggs, milk, sour cream, garlic powder, salt, and pepper. Pour this egg mixture evenly over the layered ingredients in the slow cooker. Do not stir—allow the liquid to settle between the layers.
- Cover and cook on LOW for about eight hours. If you need to shorten the cooking time, start on HIGH for 2 hours, then reduce to LOW and cook an additional 4 hours. Avoid cooking on HIGH the entire time to prevent overcooking the eggs.
I served this egg casserole with toast, jam, fresh fruit, and yogurt for a complete family meal. It’s a comforting, no-fuss option that works well for a leisurely weekend breakfast, a busy weekday morning, or a relaxed dinner.
Notes and variations: you can easily adapt this recipe to your family’s tastes. Substitute cooked bacon, breakfast sausage, or shredded chicken for the ham. Swap in your favorite cheeses—Monterey Jack, pepper jack, or Swiss all work nicely. Add spinach, mushrooms, or sliced tomatoes if you prefer more vegetables. For a spicier version, stir in a pinch of cayenne or use jalapeños in place of one pepper.
Storage and Reheating
Allow the casserole to cool slightly before transferring leftovers to an airtight container. Refrigerate within two hours of cooking and use within 3–4 days. To reheat, portion into a microwave-safe dish and heat in 30- to 60-second intervals until warmed through, or reheat in a 350°F (175°C) oven until hot. For best texture, avoid overheating; this helps keep the eggs tender.
Make-Ahead Tips
This slow cooker breakfast is perfect for make-ahead planning. Assemble the layers in the slow cooker insert the night before, cover, and refrigerate. In the morning, place the insert in the cooker and set to LOW for eight hours or follow the shorter cook method if you’re pressed for time. Preparing toppings—salsa, chopped herbs, or sliced avocado—before serving makes this an effortless crowd-pleaser.
