Pumpkin Muffins with Berries and Cinnamon Sugar Topping

What You Will Need:
- 2 1/2 cups of flour
- 2 cups of sugar
- 1 Tbs. pumpkin pie spice* (Alternatively, use 1 tsp. cinnamon, 1 tsp. nutmeg, and 1/2 tsp. ginger.)
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1 1/4 cup pumpkin (ensure this is canned pumpkin, not pumpkin pie filling)
- 2 large eggs
- 1/4 cup vegetable oil
- 1 cup of fresh or frozen blackberries
- 1/4 cup sugar
- 2 Tbs. flour
- 1/2 tsp. cinnamon
- 2 Tbs. butter
Tools Required:
- muffin tin
- ice cream/ cookie scoop with trigger
- pastry blender
Begin by combining the dry components and the wet components in separate containers.
In a sizable bowl, mix the flour, sugar, spices, baking soda, and salt. Separately, blend the pumpkin, eggs, and oil in another bowl.

Next, incorporate the wet ingredients into the dry ingredients.
Pour the pumpkin blend into the flour mixture, mixing thoroughly, then gently fold in the blackberries.
Phase 3: Prepare paper-lined muffin cups.

Fill 24 paper-lined muffin cups until they are 3/4 full. (Note that the batter will be quite firm.) Alternatively, thoroughly spray muffin tins with non-stick spray and skip the paper liners.
Phase 4: Place streusel topping on each muffin.
Streusel Topping: Combine 1/4 cup sugar, 2 Tbs. flour, and 1/2 tsp. cinnamon. Use a pastry blender to cut in 2 Tbs. butter until it resembles crumbs.
Distribute this topping across the surface of the muffin batter.
Phase 5: Baking time.
Bake at 350 degrees for 28-30 minutes, or until a toothpick inserted into the center emerges clean.
Transfer the muffins from the tin and allow them to cool completely on a wire rack.
