Preparing Chicken & Pepper Fajita Wraps

Easy Chicken Fajitas

Chicken Fajita Ingredients:

  • 3 boneless, skinless chicken breasts
  • 1 onion
  • 4 peppers, any color
  • 1 package fajita seasoning mix (or you can create your own delicious seasoning!)
  • 1 cup grated cheddar cheese
  • flour tortilla wraps
  • desired toppings like salsa, sour cream, lettuce, and tomatoes

1. Getting ingredients ready for cooking

Cut the peppers, onions, and chicken into slender strips.

2. Cooking the Chicken in a cast iron pan

While any pan works, I prefer a cast iron one for this recipe. It enhances the meal's flavor, and I appreciate the texture the chicken achieves this way.

Mastering cast iron requires some practice. I learned that first, add about 2 Tablespoons of oil, heat it on medium high heat, and then introduce the chicken, which should produce a 'sizzle'.

A second useful cast iron insight is to place the meat in a single layer. Arrange it piece by piece, and then allow it to cook undisturbed for a few minutes; this develops a nice crisp exterior, making turning simple.

Season the chicken with salt and pepper. Flip it once the edges begin to whiten. Continue cooking until it is fully cooked through.

After the initial chicken batch is done, transfer it to a clean dish. Repeat this process with the remaining chicken, adding it to the first batch in the clean dish.

3. Sautéing the vegetables

After removing the chicken from the cast iron pan, pour in all the sliced peppers and onions. Stir them quickly since the pan is already hot. If the bottom seems dry and is about to burn, add 3 Tablespoons of water and scrape up any browned bits.

Season while you sauté with salt and pepper.

Allow the mixture to gently bubble to develop a wonderful taste.

When the vegetables are slightly crisp but tender, introduce the chicken and the fajita seasoning mix from the package. Pour in 1/4 cup of water and mix thoroughly.

Cook on a low simmer for approximately 20 minutes, stirring every so often to avoid sticking to the base for optimal flavor.

5. Present with your preferred garnishes
