These Mexican chicken rice bowls are made to be personalized: set out grilled chicken, rice, avocado, and your favorite toppings, and let everyone assemble their own. They work well for picky eaters and for feeding a crowd.

Sometimes two unrelated ideas come together and produce a real winner, and this recipe is one of those happy accidents. I was listening to a podcast recently where a woman shared her ideas for simple weeknight dinners. I’m honestly worn out from cooking every single day (does anyone else feel that way?), so I listened closely.
Her main tip was to keep dinner uncomplicated, using ground beef or chicken, and to serve it over rice. She makes a big batch of rice at the start of the week and uses it as the base for dinner every night. Clever, right?
A few days later, we had some special guests staying with us. I wanted to make them good dinners, but with several different dietary needs to work around, I wasn’t sure how to satisfy everyone. That’s when the idea for Mexican Chicken Rice Bowls came to me. By serving every component separately, each person could build a bowl that fit their tastes and diet.
I arranged everything on a large wooden lazy Susan in separate bowls and let everyone spin and build. It was a hit! We’ve made it our go-to easy dinner ever since. It’s fresh, customizable, and full of flavor. Here’s how you can make it too!
Why You’ll Love These Mexican Chicken Rice Bowls
- Customizable for Everyone: A great fit for picky eaters and anyone with dietary restrictions, since each person builds the bowl they want.
- Fresh and Flavorful: Smoky grilled chicken, rice, creamy avocado, crisp veggies, and zippy salsa all come together.
- Great for Entertaining: Setting it out on a lazy Susan lets guests assemble their own bowls, which is always fun.
- Simple Prep: Just the chicken and rice require cooking. Everything else is fresh and takes minutes to put together.
- Perfect for Meal Prep: Cooking the chicken and rice in advance makes weeknight dinners go much faster.

Step-by-Step Directions for Mexican Chicken Rice Bowls
(The complete instructions are in the printable recipe card at the bottom of this post.)

- Marinate and grill the chicken, then cook the rice.
- Get all the toppings ready.
- Create a serving station and invite everyone to build their own bowl!
- Serve with chipotle ranch dressing, or whip up your own with mayonnaise, lime juice, and hot sauce.
Helpful Tips for Making This Recipe
- For the best smoky taste, grill the chicken outside or use a grill pan.
- Toss sliced avocado with a little lime juice to keep it from browning.
- To make your own chipotle ranch, stir together mayo, lime juice, and a few dashes of hot sauce, then adjust the heat to suit your taste!
- Add the chips at the very end so they stay crisp (optional). We enjoy this bowl without them too, but plenty of people love the extra crunch!

Swaps and Variations for Mexican Chicken Rice Bowls
- Ground beef or turkey can stand in for the grilled chicken.
- For a lower-carb bowl, use cauliflower rice or quinoa instead of rice.
- Pepper jack or a Mexican cheese blend can replace the cheddar.
- Black olives, jalapeños, or pickled red onions add extra flavor.
How to Portion, Cook, and Freeze These Bowls to Fit Your Routine
Cooking for Two? Cut the ingredients in half, cook one chicken breast per person, and scale the toppings to match.
Freezing Ahead: Freeze the grilled chicken and the rice in separate freezer-safe containers. Thaw them in the fridge overnight and reheat before serving, and keep the fresh toppings chilled and ready. You can also freeze the chicken in its marinade for an easy prep day!
Reheating After Freezing: For a hot dinner, warm the chicken in a 350°F oven for about 15 minutes until heated through, and warm the rice in the microwave.

Ingredients
Method
- Make the marinade: In a bowl, whisk together olive oil, lemon juice, chili powder, garlic powder, oregano, paprika, salt, and black pepper.
- Marinate the chicken: Put the chicken breasts in a resealable bag or shallow dish. Pour the marinade over them, turning to coat each piece well. Refrigerate for at least 30 minutes, or up to 4 hours for the best flavor.
- Grill the chicken: Heat the grill or grill pan to medium-high. Cook the chicken about 6–7 minutes per side, until cooked through to an internal temperature of 165°F. Remove from heat, let it rest 5 minutes, then slice thinly.
- Cook the rice: Make the rice using your favorite method (baked rice is my top pick). Keep it warm.
- Prep the toppings: Slice the avocado, shred the lettuce or spinach, dice the tomato and red onion, and grate the cheese. If you like, boil and grill the corn, then cut the kernels off with a serrated knife.
- Set up the serving station: Arrange the rice, grilled chicken, and all the toppings in separate bowls or containers on a lazy Susan or serving counter.
- Build your bowl: Everyone layers a bed of lettuce, rice, chicken, avocado, salsa, tomatoes, corn, onion, cheese, chips, and a drizzle of chipotle ranch dressing.
