This simple crock pot baked beans recipe makes a wonderful side dish for summer cookouts or family get-togethers.

With a mix of varied beans and homemade barbecue sauce, it develops a superb flavor while simmering; it can also function as a main course with crispy bacon and browned ground beef, which some call “calico beans,” and our children enjoyed it with buttered bread!

Benefits of This Recipe

During warm summer weather, I prefer using the slow cooker over heating the entire house with an oven; this classic recipe excels in a crock pot.

I have successfully prepared and then frozen this recipe in a freezer bag for later use, creating a perfect make ahead meal with minimal preparation time.

Easy slow cooker baked beans complement picnics, potlucks, and family meals beautifully, serving well as either a side or a main; furthermore, the leftovers taste excellent the following day!

Ingredients for the Slow Cooker Bean Dish

(A printable recipe card is provided below for your convenience.)

  • 1 pound of lean ground beef
  • 4 slices of bacon, cut into thin strips—though I favor thick cut bacon, any type will suffice; omitting the bacon still results in a delicious meal.
  • 1 medium onion, chopped
  • 1/2 cup ketchup
  • 1/2 cup brown sugar
  • 3 teaspoons of yellow or dijon mustard
  • 4 teaspoons of vinegar
  • salt to taste
  • 1 can of pork & beans with sauce—I utilized Bushs pork & beans, but your favorite brand is welcome.
  • 4 distinct cans of beans, rinsed and drained—I used red kidney beans, black beans, white beans, and lima beans; feel free to substitute with your preferred mix, such as green beans, wax beens, navy beans, or butter beans.

Directions for Crockpot Baked Beans

  1. In a heavy skillet, cook the ground beef and diced onion until the beef is browned and the onions are translucent, then drain any excess fat.
  2. Separately, place the cut bacon in a cold skillet, heat to medium high, and simmer until crisp, stirring often (approximately 10-15 minutes); use a slotted spoon to remove the bacon onto a paper towel to absorb grease.

Method

  1. Begin by combining the minced beef and chopped onion in a sturdy skillet. Cook the mixture until the meat achieves a rich brown color and the onion becomes translucent, then discard any surplus grease.
  2. At the same time, arrange the sliced bacon in a chilly skillet over medium-high flame. Allow it to simmer, stirring often, until it reaches a satisfying crispiness (roughly 10 to 15 minutes). Once done, lift the bacon out with a slotted spoon and let it rest on a paper towel to soak up the excess oil.
  3. Keep a handful of crispy bacon fragments aside for later decoration, then transfer the remaining bacon bits into the slow cooker. Mix in the browned ground beef, all the canned legumes (remember to rinse everything except the pork and beans), ketchup, brown sugar, mustard, vinegar, and a pinch of salt.
  4. Gently fold everything together with a large spoon until the ingredients are thoroughly integrated.
  5. Secure the slow cooker lid and set it to cook on the low heat mode for four hours, or switch to high heat for a two-hour cook time.
