Ingredients for Easy Crock Pot Chicken Alfredo

(A printable recipe card is at the bottom of this post for your convenience.)

  • Three boneless, skinless chicken breasts (about 1 pound)
  • One tablespoon of olive oil
  • Two teaspoons of butter
  • One teaspoon of Italian seasoning
  • Two cups of heavy cream
  • Four cloves of fresh garlic, crushed
  • Salt and pepper, to taste
  • One pound of penne pasta (4 cups dried)

Step-by-Step Instructions for Easy Crock Pot Chicken Alfredo

  1. Heat 1 tablespoon of olive oil and 2 teaspoons of butter in a heavy frying pan over medium-high heat. (I like my large cast iron skillet best.) Lay the chicken breasts in the hot pan, where they should sizzle on contact. Sprinkle with salt, pepper and 1 teaspoon of Italian seasoning. Sear each side until golden brown, about 2 to 3 minutes. They won’t be cooked through, just seared.
  2. Lay the seared chicken breasts on the bottom of the crock pot.
  3. Add the 4 crushed garlic cloves, then pour the heavy cream over the chicken.
  4. Season with salt and pepper.
  5. Cook on high for 3 hours or on low for about 5 hours. Cooking times vary between slow cookers, so keep an eye on yours. The sauce should be hot and bubbling, and the chicken cooked through.

  1. Once the sauce is hot and the chicken is cooked, transfer the breasts to a cutting board. Slice into bite-sized chunks and stir them back into the sauce.
  2. Cook the penne according to the package directions just before serving, then drain it.
  3. Ladle the alfredo sauce over the penne, or stir the sauce and pasta together in the crock pot before serving.

Tips
  • Searing the chicken first gives it a golden crust, adds flavour and keeps it juicy.
  • For extra flavour, pour the heavy cream into the pan you seared the chicken in and scrape up the browned bits with a spatula. Then pour that cream over the chicken in the crock pot. It adds even more flavour!
  • For a spicier dish, season the chicken with some Cajun seasoning before searing.

How to Store Leftover Chicken Alfredo

Eat leftovers within 3 days by storing them in an airtight container in the fridge. For longer storage, put them in an airtight container or zip-top bag in the freezer, where they keep for up to 3 to 6 months.
