My mother-in-law was a cook who seldom needed a recipe; she possessed an innate understanding of ingredients and proportions.
I documented what she did while she prepared lasagna for a large gathering, realizing that pre-cooking the noodles was unnecessary, and the result was excellent!
This recipe serves as a superb freezer meal for busy periods or unexpected visitors, yielding 2 9×13 inch pans. Halve the ingredients if one pan suffices.
For just two people, consider using smaller casserole dishes to assemble several portions for freezing; it offers the comfort of homemade convenience food!
Key Ingredients for Simple Make-Ahead Lasagna:
- Lean ground beef – Use lean meat to ensure a rich sauce without excessive grease.
- Pasta sauce – Any preferred jarred sauce will work well, such as Prego.
- Cottage cheese (2%) – This adds a creamy texture and protein without weighing the dish down.
- Lasagna noodles – Both regular and oven-ready varieties are suitable.
- Mozzarella cheese – Essential for achieving that beloved, gooey top layer.
Instructions for the finest make-ahead lasagna:
- Brown the ground beef, incorporate the pasta sauce, and rinse the pasta sauce container with water to extract all residue (a tip from my mom!); ensure the sauce has ample liquid.
- Arrange all other items—grated cheese, lasagna noodles, and cottage cheese—on your counter, then build the lasagna in these successive layers:

- a modest layer of meat
- uncooked lasagne noodles
- a small layer of mozzarella cheese
- uncooked lasagna noodles
- cottage cheese
- a small layer of meat
- uncooked lasanga noodles
- the remaining sauce
- mozzarella cheese
- Should you freeze it beforehand, wrap it first in plastic wrap and subsequently in foil. Use a sharpie marker for labeling and store in the freezer for a maximum of 3 months.
How to cook lasagna prepared in advance?
Once ready for consumption, *allow it to thaw in the refrigerator, then bake covered at 350 degrees for approximately 1 hour, or until a knife inserted in the middle shows the noodles are tender. If it appears dry during baking, pour a small amount of water around the perimeter.
{**Alternatively, if thawing is missed, as often happens… remove from the freezer, place in the oven while it heats up, and bake covered for 1 ½ hours at 300 degrees, followed by a 30-minute bake at 350 degrees.**}

How can I confirm the lasagna is fully cooked?
Gently insert a knife into the center of the pan; if it passes through the noodles without resistance, the pasta is done and it is ready. At this point, you should also observe bubbling around the edges and melted cheese on top.
TOP TIPS- The lasagna's layers are not overly abundant, which is a way to save money. Feel free to increase the amount in the layers if you prefer more!
- Ensure the final layer of sauce completely covers all the noodles and runs down the sides properly. It should appear slightly 'thin,' but this is acceptable; the extra liquid aids in cooking the noodles during baking.
- Monitor the lasagna while it bakes. If it seems to be drying out, simply pour a little water around the edges.

Ingredients

- Uncooked lasagna sheets
- A thin spread of mozzarella cheese
- Additional pasta sheets
- Cottage cheese (distribute the entire carton evenly between the two pans)
- Another portion of the meat mixture
- More uncooked pasta sheets
- The remaining sauce
- Mozzarella cheese
- If preparing for the freezer in advance, seal with plastic wrap followed by foil. Mark the container with a marker and store in the freezer for a maximum of three months.
Notes
After thawing in the refrigerator, bake the dish covered at 350 degrees for approximately one hour, or until a knife inserted centrally shows the noodles are soft.
Monitor the lasagna during the cooking period; if it appears dry, add a small amount of water around the edges and replace the foil cover.
For same-day baking, cover with foil and bake covered for 45 minutes. Then, uncover and insert a noodle into the center to test for tenderness; if not done, cover and continue baking. Add a splash of water around the edges if dryness occurs.
To achieve a slight browning on the cheese surface, switch the oven to broil and broil on a high rack for roughly 3 minutes, or until the noodles just start to brown.
Allow the lasagna to settle on the counter for a short period before slicing and serving it.
