This easy chicken orzo casserole bakes in one pan with spinach, cherry tomatoes, cream and parmesan. Cozy comfort food that’s ready in under an hour!

I recently discovered this (new to me!) recipe while scrolling on social media, and it instantly caught my eye—creamy Tuscan flavors, juicy chicken, and orzo pasta, all baked together in one dish. Have you ever cooked with orzo before? I hadn’t! It’s a small rice shaped pasta, and since it was new to me, it felt like a fun new kitchen adventure!
With simple, fresh ingredients—cherry tomatoes, spinach, sun-dried tomatoes, and Parmesan—this casserole delivers a burst of flavor without anything fancy or fussy. Everything goes straight into the baking dish, making it an easy, no-fuss recipe that feels special enough for guests. It bakes to perfection, is so comforting, and reminds me of lasagna, but with a delightful Tuscan twist.

How to Portion, Cook, and Freeze This Recipe to Fit Your Lifestyle
This recipe makes a lovely 9×13 sized baking pan full – perfect for a family or even if you’re hosting guests.
- For Two People: Cut the recipe in half and bake in an 8 x 8 inch pan (and you’ll probably have a few leftovers for the next day).
- To Freeze Ahead: I haven’t tested this as a freeze ahead meal, but because of the fresh spinach and tomatoes, I wouldn’t recommend freezing it before baking. Freezing the leftovers to be heated at a later date would work fine, though.
- To Reheat After Freezing: Since you are freezing it already fully baked, it can simply be thawed in the fridge and reheated in the microwave.

Helpful Tips When Making This Recipe
- You don’t need to rinse the dried orzo before adding it to this casserole dish.
- For an easy meal prep tip, dice chicken in the portion for this casserole and freeze it. Then on the day you want to make this simple dump and bake casserole, it’s all ready to use.
- If you find you’d like the casserole to have more sauce, stir in some additional cream before adding the parmesan to the top to melt in.
- For a lighter version, you can replace the cream with 1/4 cup plain greek yogurt.
- You could add more veggies like diced peppers or mushrooms for another option.
- Let the casserole sit for a few minutes before serving to let all the flavors meld together.
- Wipe the baking spatters on the edge of the baking dish with a damp cloth for a pretty presentation for company.
Frequently asked Questions about this Chicken Orzo Casserole
- Do I need to cook the orzo first? No. It cooks right in the pan as it soaks up the broth and cream.
- Can I make it ahead or freeze it? It’s best baked fresh, because the spinach and tomatoes don’t freeze well raw. Baked leftovers freeze well, so thaw them in the fridge and reheat.
- Can I make it for two? Yes. Halve it and bake in an 8×8 pan. You already say this in the post, so it’s an easy one.

Grandma Rita’s Kitchen Tips
Sometimes it’s fun to use tried and true favorite recipes, but other times it’s nice to experiment with something totally different. Orzo was new to me, but I love how this new dish turned out. I’m going to mark it in my memory file as a “special company recipe”. Don’t be afraid to experiment! If you want to tweak the flavors—add mushrooms, swap the cream for Greek yogurt, or toss in extra veggies—go for it! Write your adjustments in the margins of your recipe card. That’s how you make it yours.

If the casserole seems drier than you’d like, stir in more cream before adding the Parmesan. Leftovers keep covered in the fridge for 3 to 4 days. Reheat in the microwave, or in a 350°F oven with a splash of broth so it doesn’t dry out.
