I’ve never been much of a fan of traditional stew made with stew meat. It’s just not really my thing. But this quick and easy hamburger stew is one my mom used to make, and she showed me how after we were first married.

She made it one time when she came to visit, and I still remember pulling it out of the oven with her standing in the kitchen beside me. It uses ground beef instead of stew meat and relies on simple, everyday ingredients: a few potatoes, carrots, onions (if your family likes them), and a can of tomato soup.

It’s incredibly easy to make, and whether you slow cook it or bake it in the oven, it makes the house smell cozy and comforting all day long. It’s one of those perfect comfort food meals for cold days, and we love serving it with fresh buttered sourdough or whatever bread we have on hand. I really think you’re going to love it.

How to Make Slow Cooker Hamburger Stew

  1. Brown the hamburger and onion together until the hamburger is no longer pink. Season with salt and pepper while cooking.
  2. Peel and cube the potatoes and carrots.
  3. Layer the hamburger in the bottom of the slow cooker, followed by the potatoes and carrots.
  4. Pour over the can of tomato soup, then fill the soup can with water and pour that over, too. (My mom always taught me to use the water to get every bit of soup out of the can!)
  5. Season with more salt and pepper.
  6. Cover and slow cook until the veggies are tender (6-8 hours on low, or 4 hours on high).
