Two Approaches for Storing Frozen Meatballs
- Portion by Meal Size for Freezing: If you know the exact number of meatballs needed for each meal, freezing them in those specific portions is ideal. This was my practice for numerous years. To do this: Set the ziploc bag atop a cookie sheet and use a small scoop to transfer the meatballs directly into the bag.

Keeping them on the cookie sheet simplifies moving them to the freezer. (Please note that this production run will yield more than one bag matching the size shown.)

- Individual Flash Freezing of Meatballs: Since I now cook for only 2 people, I favor flash freezing the meatballs. The steps are as follows: Line 2 cookie sheets with parchment paper, then use a cookie scoop to portion the meatballs as desired. Once portioned, smooth each one by rolling it in the palms of your hands. Place the meatballs in the freezer until completely solid—approximately 2 hours. Afterward, remove them from the parchment paper and transfer them to a large zip-top freezer bag. Because they are frozen separately, they will not adhere, allowing you to retrieve precisely what you need for each meal.

Guidelines for Cooking Frozen Meatballs
Various cooking techniques exist for frozen meatballs, so select the method that suits your preference best.
Cooking Directly from Frozen: Set your oven temperature to 400 degrees. Arrange the frozen meatballs on a rimmed baking sheet and bake for 25 to 35 minutes, or until they are sizzling and no longer pink internally.
Cooking After Thawing in the Refrigerator: Preheat the oven to 400 degrees and position the thawed meatballs on a rimmed baking sheet. Bake for 10 to 15 minutes, or until they sizzle and the pink color is gone. For a crisper top, broil for a few minutes. (This is perfect for meatball subs!)
Sauces That Complement Meatballs
A selection of sauces you might consider includes:
- The homemade Barbecue Meatball Sauce (It is both simple and delicious!). We enjoy serving this over mashed potatoes.
- Jarred pasta sauce, suitable for serving alongside pasta.

Ingredients
Method
- Place everything except the ground beef in a blender, and blend until smooth.
- Put the ground beef in a large mixing bowl, and pour over the add in ingredients. Mix with a spoon at first, and then mix together well using your hands so that all the ingredients incorporate well into the meat. If you don’t like to touch it with your hands, use a pair of gloves. Squeeze the meat mixture together to mix it up well.
- Freeze in meal sized portions: If you know exactly how many meatballs you’ll be using for each meal, you can freeze them in meal sized portions. I did this method for many years. Here’s how: Place the ziploc bag on a cookie sheet and, using a small scoop, scoop them right into the bag.
- Flash Freeze Meatballs Individually: Now that I’m cooking for just 2 of us, I prefer to flash freeze the meatballs. To do that
- Line 2 cookie sheets with parchment paper and use a cookie scoop to scoop our the meatballs in the proportions you’d like. After they are portioned, roll each one in the palms of your hand to make them smooth.
- Place the meatballs in the freezer and freeze until solid – about 2 hours. Then pop them off the parchment paper and place them in a large zip-top freezer bag. Since they are frozen individually, they won’t stick together and you can just take out however many you want for each meal.
- Homemade Barbecue Sauce (my recipe is below)
- Pasta sauce that you buy in a jar.
- Homemade sweet and sour sauce – and then serve the meatballs over rice.
- 1/4 cup brown sugar
- 1 cup ketchup
- 1/4 cup water
- 2 Tablespoons worcestershire sauce
- 2 tablespoons vinegar
- 1 teaspoon chili powder.
