How to Portion, Cook, and Freeze This Recipe to Fit Your Lifestyle

This recipe is wonderfully flexible. Whether you’re cooking for a family, prepping ahead, or cooking for two, here are some different options you can choose from to make it work for you:

Cooking for Two? Prepare the full batch and portion it into meal-sized servings. Once cooled, freeze it flat in zip-top bags or containers for easy storage.

Feeding a Family? Double the batch (it will make a LOT!) and freeze extras for quick and easy future meals.

Freezing Ahead? Allow the soup to cool completely before portioning it into meal-sized freezer containers or bags. Lay them flat to save space in the freezer.

Heating After Freezing? Just reheat on the stovetop or in the microwave when ready to enjoy. Or, put it in the crockpot on low to heat up slowly throughout the day.

Helpful Tips When Making This Recipe

  • For a thicker soup, let it simmer longer to allow the rice to absorb more liquid. Likewise, if you’d like it thinner, add more water.
  • If freezing, slightly undercook the rice so it doesn’t get mushy when reheated. Or, you can freeze the soup without the rice and add the rice in when reheating it.
  • Stir in a splash of broth or water when reheating to adjust consistency.

Hamburger Rice Soup

This hearty hamburger rice soup is a cozy, freezer-friendly meal for busy nights. Packed with ground beef, rice and vegetables, it’s easy to adapt and perfect for meal prep!

Ingredients

Method

  1. In a large soup pot or Dutch oven, heat the olive oil and sauté the carrots, onions, red pepper and diced celery for about 3 minutes. Add the ground beef and cook with the vegetables until browned. Drain off any excess fat.
  2. Dissolve the bouillon cube in 4 cups of water, then add it to the beef mixture along with all the remaining ingredients. Bring to a boil, reduce the heat to a simmer, cover and cook for about 1 hour, stirring occasionally, until the rice is tender.

Notes

To freeze: cool completely and freeze flat in bags. For the best texture, slightly undercook the rice, or freeze the soup without it and add the rice when reheating.

Keeps 3 to 4 days in the fridge and up to 3 months in the freezer. Add a splash of broth or water when reheating, since the rice absorbs liquid as it sits.
