This original scotcheroos recipe (Grandma’s classic!) comes together in minutes with peanut butter, chocolate, and butterscotch. A no bake dessert bar that makes 24 squares — perfect for potlucks and picnics.
I grew up with Grandma Bernice make scotcheroos from her old, yellow “Tried and True” cookbook. In fact, I pulled it out of my cupboard to make these just the other day.
The funny thing is, Grandma never could seem to remember the name “scotcheroos”, so to her – and us – they were always “skiparoos”!
I just discovered that this classic no bake dessert bar recipe originated on the back of the Rice Krispies box in 1965. They’ve been a favorite recipe for a long time…

Ingredients needed for this easy scotcheroos recipe:
This easy scotcheroos recipe comes together with just a handful of pantry staples: sugar, corn syrup, peanut butter, Rice Krispies, semi-sweet chocolate chips, butterscotch chips, and a little butter. (A printed recipe card with exact measurements is available at the end of this post for your convenience.)
Step by Step instructions for this no bake dessert bar recipe:
Start by stirring the sugar and corn syrup together in a medium saucepan and bringing it to a boil. Pull it off the heat and stir in the peanut butter until it’s smooth and glossy, then pour the whole mixture right over your Rice Krispies. It’ll be thick and set up fast, so work quickly as you stir!
Press the mixture into a parchment-lined 9×13 pan — wetting your hands with hot water makes this so much easier. Then melt your chocolate chips, butterscotch chips, and a tablespoon of butter together in the microwave, stirring every 30-45 seconds until smooth, and spread that glossy layer right over the top. A sprinkle of coarse sea salt here is completely optional, but so good.
Let the whole thing chill until the chocolate layer is firm, then cut into 24 bars.

Tips for making Scotcheroos:
- Grandma always made hers in a jelly roll pan (15 1/2 x 12 1/2), which yielded a thinner bar – and more of them! It was perfect for family gatherings, picnics, and potlucks.
- Wet your hands with hot water when it’s time to press down the scotcheroos. It works much better that way.
- The original recipe does not call for adding butter to the chocolate and butterscotch chips, but I find it helps to make the mixture melt and spread better.
- Once the chocolate has firmed, keep the scotcheroos at room temperature so they are soft and chewy to eat.
