I was conversing with an acquaintance recently and she noted that one of the most challenging aspects of cooking is devising meal concepts! I completely concur. Combining that the rising cost of groceries makes it quite difficult.

While seated to attempt to organize some simple, nutritious, and delectable dishes for the upcoming week, I chose to convert plain chicken breasts into meal prep concepts using zesty dressings. To conserve funds, I acquired a club pack of boneless, skinless chicken breasts (on promotion this week!) which contained eight chicken breasts.

To make them last longer, I sliced each chicken breast in half – making them half as thick. Each portion is still a lovely serving size, and they will stretch twice as far.

Chicken dressings are so quick to blend and pour over poultry. Allowing the chicken to soak in the dressing for half an hour or up to 24 hours makes the meat full of succulent flavor.

A guide to preparing this Chicken Marinade, step by step

  1. Place all marinade components into a small bowl or a two-cup measuring cup, then whisk vigorously until the mixture is fully blended and uniform.
  2. Put chicken breasts inside a spacious one-gallon zip-top pouch, then distribute the marinade components over the meat. Use your fingers to gently massage the mixture, ensuring every piece is well-coated. Secure the bag tightly after releasing the trapped air.
  3. Refrigerate the chicken and marinade for a minimum of 30 minutes, or keep it there for up to 24 hours. The extended marination time enhances the flavor! Alternatively, you can freeze the marinated chicken for future use on hectic days. To prepare frozen marinated chicken, transfer it to the refrigerator and allow it to defrost overnight and through the following day before cooking. As it thaws, the flavor will penetrate the meat.

Instructions for Preparing Chicken Using This Greek Marinade Formula

  • Grilling Method: Set the grill to a high temperature and lightly coat the grates with oil. Take the chicken out of the marinade and throw the liquid away. Cook the chicken pieces on the grill for 3-5 minutes per side, or until the fluids are clear and the internal heat reaches 165 degrees Fahrenheit. To check the internal temperature, insert a food thermometer into the meatiest section of the breast. Cooking duration varies according to the chicken's thickness.
  • Stovetop Method: Pour 1-2 tablespoons of oil into a large skillet and heat over medium-high. When the oil is hot, slide the chicken breasts into the pan, ensuring they don't overlap. Cook the breasts (without shifting them in the pan) for roughly 5 minutes, then turn them over. If the pan looks a little dry, add a knob of butter or extra oil and cook the other side for 5-7 minutes, or until the juices run clear and the internal temperature is 165 degrees. Another way to test for doneness is to cut into the middle. You should see absolutely no pink when it is fully cooked. Cooking times will always depend on the breast's thickness and the pan type you are using.
  • Oven Method: Set your oven to 400 degrees. I like to bake chicken in my stoneware baking dish without using parchment paper. However, if you lack a stoneware pan, you can line a shallow baking dish with parchment paper or aluminum foil. Take the chicken out of the marinade (throw away the leftover marinade) and set it on the baking pan. Bake at 400 degrees for 15-20 minutes; baking times will differ based on the chicken's thickness. The juices should be running clear and the internal temperature should be 165 degrees Fahrenheit. If you desire crispier chicken, you can place it under the broiler for a short time to achieve that texture.

A universal guideline for any poultry variety involves allowing it to relax beneath an aluminum foil cover for roughly five minutes post-cooking before presenting it on the plate.

What is the ideal vessel for softening meat in a flavor bath?

A highly practical method for infusing meat with flavor involves using a large zip-top pouch (similar to a disposable freezer bag). Alternatively, reusable zip-top bags are available and can be cleaned for future use. If neither is on hand, fear not! Here are several alternative approaches:

  • A bowl– Simply put the chicken, already coated in marinade, inside a bowl and seal it tightly with plastic wrap before refrigerating. A glass or ceramic container is ideal. It is beneficial to shift the chicken around several times while it marinates to ensure every piece is thoroughly coated and saturated.
  • A marinating vessel– I acquired a dedicated marinating container from Tupperware on my wedding day (three decades past!), and it remains excellent. My version is a “compact” model and functions similarly. It features a secure lid and can be inverted during the marinating process to guarantee the meat is fully enveloped.
  • Steer clear of aluminum vessels-Since the marinade contains acid, aluminum can interact with it, altering both the taste and appearance.

Easy Greek Chicken Marinade Recipe

Skip dinner stress with this straightforward Greek chicken marinade. A tasty combination of basic components and spices transforms ordinary chicken into a Mediterranean flavor. Perfect for hectic schedules, this dressing comes together quickly and works well in a Ziploc bag for simple meal prep or freezer storage. Whether you grill, bake, or use the stovetop, this adaptable recipe guarantees a flavor explosion in each bite, making it a favored weeknight option for family or visitors.

Ingredients

Method

  1. Combine all marinade components in a small bowl or a two-cup measure, stirring until fully integrated.
  2. Transfer the chicken breasts into a spacious one-gallon zip-top pouch and distribute the blended marinade over them. Use your hands to gently massage the liquid across every piece, ensuring full coverage. Seal the bag tightly after expelling any trapped air.
  3. Place the chicken and marinade in the fridge for at least 30 minutes or up to 24 hours. Or, you can place the marinaded chicken in the freezer to have ready for a busy day in the future. When you are ready to use frozen marinaded chicken, remove from the freezer and let thaw in the fridge all night and the next day before cooking. As it thaws, it will be marinading the flavor into the chicken.
  4. On the Barbecue: Heat the grill to high heat and lightly oil the grill. Remove the chicken from the marinade and discard marinade. Grill the chicken pieces on each side 3-5 minutes, or until the juices run clear and the internal temperature is 165 degrees farenheit. To measure the internal temperature of chicken, use a food thermometer and stick it into the thickest part of the chicken breast.
  5. On the stovetop: Add about 1-2 tablespoons oil to a large skillet and heat to medium high heat. When the oil is hot, place the chicken breasts in the pan, making sure they are not overlapping in the pan. Cook the chicken breasts (without moving them in the pan) for about 5 minutes and then flip them over. If the pan seems a bit dry, add a pat of butter or some more oil and cook on the other side for 5-7 minutes, or until the juices run clear and the internal temperature is 165 degrees. Another way to check to see if it is cooked through is to slice it in the middle. You should see no pink at all when it is cooked through. Cooking times will always vary depending on the thickness of the chicken breast and the type of pan you are using.
  6. In the oven: Preheat the oven to 400 degrees. I prefer to bake chicken in my stoneware baking pan without any parchment paper. However, if you don’t have a stoneware pan, you can line a shallow baking dish with parchment paper or aluminum foil. Remove the chicken from the marinade and place on the baking pan. Bake at 400 degrees for 15-20 minutes (baking times will vary based on the thickness of the chicken). The juices should be running clear and the internal temperature should 165 degrees farenheit. If you want to have crispier chicken, you can place it under the broiler for a few minutes to crisp it up.
