This vanilla strawberry cake recipe receives a delicious makeover with a luscious fresh strawberry frosting – the ideal treat for memorable celebrations!

I posed the question to our son about whether he’d be open to trying something different for his birthday celebration, moving away from our usual vanilla cake tradition.

Upon discovering an enticing multi-layered cake design on Pinterest, I felt a moment of trepidation.

Goodness me! Is it possible for me to recreate a cake akin to Yellow Bliss Road’s Fresh Strawberry creation?

I experimented with several ingredient substitutions, but I thoroughly enjoyed experimenting with this new and delectable variation for the ultimate moist vanilla cake!

(A convenient printable recipe card is included below for your ease.)

Essential components required:

For the vanilla sponge:

  • 2 ½ cups of all-purpose flour
  • 2 cups of granulated sugar
  • 1 teaspoon of baking powder
  • Half a teaspoon of baking soda
  • 1 1/3 cups of buttermilk or soured milk (To create soured milk at home, place 1 Tablespoon of vinegar or lemon juice in a 2 cup measuring cup and fill the remainder with milk to reach 1 1/3 cups.)
  • Half a cup of shortening, margarine, or butter
  • 1 teaspoon of pure vanilla extract
  • Four egg whites

For the Fresh Strawberry Cream Cheese Frosting:

  • 2 1/4 cups of heavy whipping cream
  • 1 cup of confectioner's sugar
  • One 8 ounce package of cream cheese, brought to room temperature
  • 2 teaspoons of vanilla extract
  • One and a half cups of fresh strawberries, finely diced

Adorning this moist vanilla layer cake is simplified with the addition of fresh strawberry slices.

Begin by baking the vanilla cake within 2 round pans:

  • In your mixer bowl, combine flour, sugar, baking powder, baking soda, and 1/8 teaspoon salt on a low speed. Next, incorporate buttermilk, softened butter, and vanilla. Mix using an electric mixer on low for 30 seconds, making sure to scrape down the bowl. Increase the speed to medium to high and beat for 2 minutes, scraping intermittently. Finally, add the egg whites and continue beating for an additional 2 minutes, scraping as needed.
  • Distribute the batter into 2 baking pans measuring 9×1 ½ inches, which have been greased and lined with parchment paper.
  • Bake these in a 350 degree oven for 30 to 35 minutes, or until a toothpick inserted near the center emerges clean. **Advice: Arrange the pans staggered across 2 oven shelves. After half the baking time, swap the pans to ensure even cooking.**
  • Allow the cakes to cool on wire racks for 10 minutes before loosening the sides and removing them from the pans. Complete the cooling process on the wire racks.

If possible, prepare the cakes in advance and store them in the freezer; I find frosting frozen cakes significantly easier. You can find instructions on how to freeze a cake here.

Next, proceed to create the fresh strawberry frosting

  • Place the metal bowl and the whisk attachment of your mixer in the refrigerator or freezer to chill.
  • Remove the chilled bowl and beat the whipping cream with an electric mixer until stiff peaks develop.
  • Transfer the whipped cream into a separate bowl and refrigerate it.
  • Clean the bowl and introduce the softened block of cream cheese into it.
  • Beat the cream cheese until it achieves a light and fluffy consistency, scraping the bowl occasionally.
  • Stir in the vanilla and beat a bit more, scraping the bowl periodically.
  • Slowly introduce the sugar while mixing until it is completely blended.
  • Gently fold the whipped cream into the cream cheese mixture.
  • Subsequently, fold in the strawberries.

Now, move to Step 3: Frosting the Vanilla Cake

  • Set the bottom cake layer flat-side up on a plate and spread a layer of icing over the top, keeping it 1/4 inch from the edge.
  • Carefully place the top cake layer, flat-side down, onto the bottom cake.
  • Apply the icing across the top surface and along the sides.
  • Finish the decoration with strawberry slices.
  • Refrigerate the cake until it is ready for serving.

  13. Carefully fold the reserved whipped cream into the cream cheese base.
